I am looking for a comprehensize, yet easy to read book that details the canon process and the events that led up to and surrounded it. Also explaining what was included and excluded, and commentary on these things as well.

You have a lot of choices! For a good resource that also references lots of other resources on the subject, check out Josh McDowell's The New Evidence That Demands a Verdict F.F. Bruce has done extensive work on the canon of Scripture, and has a book with that title, The Canon of Scripture Lee Strobel addresses the issue with some great Bible scholars and historians in The Case for the Real Jesus. I would actually recommend every Christian read and be familiar with this book, as it addresses some of the modern major attacks on the foundations of our faith: the Bible's trustworthiness and the very person and nature of Christ. I recently wrote a final paper for a New Testament studies class on the reliability of the Bible (specifically the NT). I recommend The Origin of the Bible, edited by F. F. Bruce. It's a compilation of articles on the subject from a bunch of evangelical scholars. It's very readable, not too scholarly, yet quite comprehensive. You can find it on Amazon.
